VANISHING OATMEAL RAISIN COOKIES
1 CUP (2 STICKS) MARGARINE OR BUTTER, SOFTEN
1-1/2 CUPS ALL PURPOSE FLOUR
1 CUP FIRMLY PACKED BROWN SUGAR
1 TEASPOON BAKING SODA
½ CUP GRANULATED SUGAR
1 TEASPOON CINNAMON
2EGGS ½ TEASPOON SALT
1 TEASPOON VANILLA
3 CUPS QUAKER OATS
1 CUP OF RAISINS
Heat oven to 350 F
Beat together margarine and sugars until creamy. Add eggs and vanilla, beat well.
Add combined flour, baking soda, cinnamon and salt, mix well. Stir in oats and raisins, mix well. Drop by rounded tablespoons unto ungreased cookie sheet
Bake 10 to 12 minutes or until a golden brown.
Cool 1 minute on a cookie sheet, makes about 4 dozen.
Note: I do mine a little differently. I add about a teaspoon of clabber girl baking powder. And since my oven cooks hot I set mine at 325f. Cookies sheets are on the middle rack and I cook mine for about 10 minutes. They don’t appear all the way done but that’s they key to making them soft. Once they cool they are cooked and have softness to them.
