2 ¼ cup all purpose flour
¾ cup of granulated sugar
1 tsp baking soda
¾ cup packed brown sugar
1 tsp. Salt 1 tsp. Vanilla extract
1 cup (2 sticks of butter or margarine soften)
2 large eggs
2 cups nestle choc chips (1 bag)
1 cup chopped nuts
Preheat oven to 375 F
Combine flour, baking soda and salt. In a small bowl,. Beat together butter, brown sugar and granulated sugar, vanilla extract and eggs in a large bowl till creamy. Add chocolate chips and nuts to the dry ingredients then slowly add the butter batter. It should come out very stiff and hard to stir, I use my hands during this stage making sure all is mixed well.
Drop by spoonfuls onto a ungreased cookies sheet and bake for 9-11 minutes. I always add about a tsp. of Clabber Girl Baking Powder to make them rise. You may have to adjust your temperature as my oven runs hot. I bake these cookies at 350F.

Rice Crispy Chicken
1-1/2 Cups crisp rice cereal, coarsely crushed
2 Tablespoons of All-Purpose flour
½ Teaspoon Salt
¼ Teaspoon Thyme
¼ Teaspoon Poultry Seasoning
¼ Cup of Margarine melted
4 Boneless Chicken Breast
Directions
In a shallow bowl combine cereal, flour, and seasonings. Mix together crushing Cereal to make it like fine bread crumbs. Place melted margarine in a bowl that you can dip your chicken into. First dip chicken in the butter then into the cereal mixture. Place chicken in a greased baking pan. If any margarine is left, drizzle it over the chicken breast. Bake uncovered at 400 degrees at 20-25 minutes. Or until juices are clear in the pan.
Serves 4

Potato Salad
3 lbs potatoes (cooked only until tender, cubed, cool)
6 eggs (hard boiled, cool, chopped coarsely)
1/3 cup red onion, finely chopped
1/3 cup celery, finely chopped
Dressing:
¾ cup mayonnaise (more or less, to taste)
1 ½ Tbsp. prepared mustard
Salt and pepper to taste
Combine potatoes, egg, onions and celery. Stir in mayonnaise, mustard and salt and pepper to taste. (The more you stir, the creamier the salad becomes so reduce stirring if you want it chunkier.)
Serves 6-8
